4 nonegg egg recipes

When I was thinking about going vegan for the first time, there were two things that would miss me. And one of them were eggs because when I went vegetarian, it was number one of my protein and meat supplement. So I was looking for many recipes from eggs. I was eating them scrambled, fried, boiled ... And then when I wanted to cut off dairy and eggs, it was really hard. I tried to find some supplements for eggs. And when I found them, then I already fell in love with eggs. So here are some of my favourite veganized recipes.



1. Waffle/Omelette

Ingredients:

60g chickpea flour

1 Tsp black salt

1/4 Tsp turmeric

1/2 Tsp salt

Pinch of black pepper

1/2 Tsp olive oil

Basil (optional)

+ veggies, bread, mustard, ketchup...


Method:

1. Mix together chickpea flour, both types of salt, turmeric, pepper and enough water to make a creamy consistency. I usually use about 150 ml of water. You can also add basil or any herbs you prefer.

2. Preheat your * waffle maker on highest heat and brush it with olive oil. Put there your mixture and let it bake for about 5 minutes.

3. Put some ketchup or mustard on top, chop some veggies and toast your bread if you want to.


* pan on highest heat and add olive oil. Put there your mixture and spread it all over your pan to omelette shape. Bake for about 3 minutes, then flip it over and bake for next 2 minutes.



2. Tofu scramble

Ingredients:

1 block of tofu

1 small onion

1 Tsp black salt

1/2 Tsp salt

Pinch of black pepper

1/2 Tsp turmeric

1 Tsp nutrition yeast

1/2 Tsp red pepper

1/3 Tsp curry powder

1 Tsp olive oil

+veggies, bread, ketchup, mustard, vegan savages, beans...


Method:

1. Cut onion on cubes and mash tofu with your hands or use fork.

2. Preheat a pan on medium heat and add olive oil. Then add onion and stir for about minute.

3. Add tofu with all spaces and stir for about 4-5 minutes.

4. Serve with whatever you like: veggies, bread, mustard, ketchup. As a typical British breakfast with vegan saveges and beans in tomato paste or with avocado toast.



3. Toasts in non-egg coat

Ingredients:

50 g pea flour

1 Tsp black salt

1/2 Tsp salt

Pinch of pepper

1/4 turmeric

3-4 slices of bigger bread or 4-5 slices of regular toast

1 Tsp olive oil

+veggies, ketchup, mustard...


Method:

1. Mix pea flour with all spices and water (about 100-150ml).

2. Preheat a pan on medium heat and add olive oil.

3. Cover toasts and bread with mixture and put it on pan. Bake it for about 2 minutes. Be careful, because this flour can burn really fast. Flip bread and let it bake for next 2 minutes from the second side. The colour of bread should be golden, so let it bake for a little bit longer if needed.

4. If you have too much of mixture, you can make a little pancake from it too. It will taste almost like an omelette.

5. I usually serve it with ketchup on top and veggies.



4. French toast

Ingredients:

3-4 slices of toast

100-150 ml soy milk

1/2 Tsp cinnamon + 1/2 Tsp for serving

1 Tsp coconut flakes

1 Tsp olive oil

+maple syrup & fruit of your choice


Method:

1. Mix soy milk with 1/2 Tsp of cinnamon. Use less milk fist and if you will still need some then add more! You can add any sweetener of your choice if you want to.

2. Preheat a pan on medium high heat and add olive oil.

3. Put toast in milk and flip it to cover it whole. Be careful to don't make it too soggy.

3. Put toast on the pan and let it bake until it won't be able to flip (about 4 minutes). Then bake it for the next 3 minutes from the second side.

4. Cut toasts on half and put it on a plate. Sprinkle them with cinnamon, add any fruit of your choice (I recommend banana) and sprinkle everything with coconut flakes.
